If you only want to have round corners, Gimp provides a tool for exactly that: It's "Select" -> "Rounded Rectangle".
If you want to apply a certain costum shape to (different) photos, you may want to have a look at the concept of "layer masks" (available in Gimp and probably in Photoshop, too). The basic idea is to have the shape as a black/white picture and as a final result obtain only the part of the photo that lies in the white area.
If you just have a problem with "smoothing" the shape, there are different possibilities what you can/want to do. E.g. you can shrink and then grow your selection to obtain a smoother boundary. Or you can blur at the boundary of the selection to have smooth edges (you can use "Select" -> "Feather" for that in Gimp).
